1.鶏もも肉を半分に切り、ボウルに入れる。鶏肉とフロリダ産グレープフルーツを交互に木串に刺す。
2.1の両端にネクタリンのスライスを刺し、具材を固定する。

オリーブオイル、塩、胡椒、ローズマリーで味付けする。
4.鶏肉を予熱したオーブンで15分、または鶏肉に火が通り、フロリダ産グレープフルーツがカラメル色になるまで焼く。

その間に、フェタチーズ、リコッタチーズ、フロリダグレープフルーツの果汁、ミントの半量をなめらかになるまで泡立てる。
6.5をピタパンに塗り、残りのミントとオニオンシードを散らす。
