1.サーモンをにんにく、しょうが、パセリと一緒にフードプロセッサーにかける。<\/p>
塩少々で味付けしミ<\/p>
ンチ状になるまで混ぜ合わせる。
2.<\/p>
濡れた手で4等分にし、ハンバーグにする。<\/p>
中型のフライパンに油を熱し、ハンバーガーを両面4~5分ずつ焼く。
3.<\/p>
ハンバーガーソースを作るため、卵黄をマスタード、タラゴン、フロリダ産グレープフルーツの皮と果汁と一緒にボウルに入れる。
4.<\/p>
バターを電子レンジで泡立つまで加熱し取り出す。ソース状になるまで泡立て器で混ぜながら卵黄にゆっくり注ぐ。<\/p>
ソースにとろみがついたら、黒こしょうを少々振っておく。
5.<\/p>
