1. グレープフルーツ2個は皮をむき、果肉を取り出す。グレープフルーツは果汁をとっておく。

2. 水と上白糖を沸騰させ、冷ましておく。

3. ミキサーに、果汁と2を混ぜ合わせたものと果肉をいれて、混ぜ合わせる。

4. 3をバットに入れ、冷凍庫で12時間以上寝かせる。

5. フォークで定期的にかき混ぜる。

6. 残りのグレープフルーツの皮をむき、果肉を取り出す。

7. 食べる直前に牡蠣を皿に分け、小さじ1杯のグラニテとタラゴンの葉を添える。
