1. グレープフルーツ1個の皮をむき、果肉を取り出す。残りのグレープフルーツは絞って果汁をとっておく。

2. フェンネルは洗ってみじん切りにする。サラダボウルにオリーブオイル大さじ3、酢大さじ3、塩コショウ少々を入れて混ぜる。

3. コリアンダーを加えて混ぜる。飾り用に葉を数枚とっておく。

4. 熱したフライパンにオリーブオイルをひき、ホタテを片面1分ずつ焼く。

5. フライパンからホタテを取り出し、フロリダグレープフルーツ果汁を注ぐ。少し煮立ててからバターを加え、ソースを作る。塩と胡椒で味を調える。

6. 洗ったホタテの貝殻にフェンネルサラダを大さじ1杯入れ、その上にホタテを3個のせ、グレープフルーツバターを塗る。
