1.大きなボールにケールをいれ、塩ふたつまみ、エクストラヴァージンオリーブオイル少々で、マッサージする。<\/p>
2.(1)のケールをしおれるまで手で揉む。

(ドレッシング作り)フライパンを中火にかけ、ベーコンをいれて、かき混ぜながらカリっとするまで焼く。

穴じゃくしでベーコンをすくって、ペーパータオルの上に出す。フライパンに残ったベーコンの油は計量カップに入れておく。オリーブオイルをくわえて、油が焼く60mlになるようにする。フライパンに油をもどす。

のフライパンにマッシュルームを入れ、3分から5分かけて油でコーティングする。

を再度加熱し、かき混ぜながら、マッシュルームに軽く焼き目がつくまでいためる。エシャロットを加え、全体が褐色になるまで炒める。

にシャンパンビネガーをくわえ、こまかな焦げのつぶは取り除き、火を止める。

エクストラヴァージンオリーブオイルを大さじ2杯分、グレープフルーツの果汁、ハチミツをくわえる。

全体をかき混ぜ、塩コショウで味を整える。ドレッシング完成。
