1.豚肉は脂と身の間に包丁で切り込みを入れ、塩、こしょうで下味をつける。豚肉に小麦粉をつけ、余分な粉をはたいておく。グレープフルーツは皮をむき、小房に分け、4等分にする。

フライパンにオリーブ油を入れ、脂身を下にして中火で3分ほど焼く。次に盛りつける面を下にして、中火で4分焼き、返して2分ほど焼く。取り出して、2分ほど休ませておく。

フライパンに残った油をふき取り、【A】を入れて、半量になるまで煮詰める。果肉を入れて、少し煮くずれるくらい煮る。
