1.鶏もも肉は皮のところにフォーク等で何箇所かに穴を空け、骨に沿って切り込みを入れ、塩、こしょうで下味をつける。

トマト、きゅうり、玉ねぎは小角に切り、イタリアンパセリはみじん切りにしてグレープフルーツ果汁、オリーブオイルを混ぜ合わせ、酢、塩、こしょうで味をととのえる。

フライパンにサラダ油を熱し、鶏もも肉の皮を下にして焼き、焼き色がついたら裏返しにしてじっくりと焼く。
