1.サーモンの刺身は柵のまま横に包丁を入れ、半分の厚みになるように開く。出来るだけ長方形になるように整え、ハーブソルトをふって下味をつける。

2.パセリは細かく刻みオリーブオイルと塩で和えておく。大根は断面が米粒サイズになる程度の太めの千切りにする。
<\/p>
3.ライスペーパーはハサミで半分にカットし、4枚を順にぬるま湯で戻しながら、まきすの上に重ね正方形を作る。その上に海苔を置く。<\/p>
4.海苔の中央よりやや手前にサーモンの身を長方形になるように置いたら、刺身の中央にグレープフルーツ、大根、パセリを置き、手前から巻いていく。巻きすからライスペーパーをゆっくりはがすようにして少しづつ巻いていくと良い。

5.オリーブオイルにハーブソルトをふり、ハーブ、おろした山葵を添える。
