白菜を1\/4に切り、芯の部分から外します。一口大に切ります。大きなボウルに入れて塩と混ぜ合わせます。白菜に重しをのせ、1時間以上そのままにします。白菜をざるに移してよく洗います。マイクロプレーンおろし器を使ってニンニクと生姜を一緒におろし、ゴチュガルと砂糖を加えてよく混ぜ合わせます。
